Why Lobster?
Jump to RecipeI did not grow up in South Florida, so I did not have access to fresh lobsters most of the year. For us, lobster was something luxurious reserved for a special anniversary.
Funny how life changes! Nowadays, I can indulge in lobster as often as I’d like, and it can be a special dish, or your regular Sunday supper! Anything from lobster rolls, grilled lobster, fried lobster, steamed, broiled, lobster bisque, stuffed lobster…you name it, you can find it in Florida!
Truth be told – I find myself extremely lucky to live here and have access to this amazingly fresh seafood all the time, which in turn leads me to testing out new recipes quite often! Enter the lobster salad. This simple, yet incredibly mouthwatering salad is so quick to make, and can be served on its own, or in a roll!
