A few simple ingredients make the kale in this recipe shine!
It’s that time of the year when we are about to wave summer goodbye and start preparing for fall – and despite the fact that summer really is an all year round phenomenon here in South Florida, we still get excited for fall, along with all of its seasonal produce and flavors it has to offer!
Which is why we should be absorbing every last moment of summer that we possibly can! That of course, in the world of food means that you should be squeezing in as many summer recipes as you can!
I ended up making this incredible kale salad late on a Sunday evening as I was rushing to get something on the table before it’s 9 PM and once again, we have not had dinner yet. I opened the fridge and started pulling out anything I could find, and at the end – this is what came together. A kale salad with quinoa, chickpeas, crumbled feta cheese and an avocado & lime dressing. The best part? It’s incredibly easy and quick to make! Because it has quinoa, it will keep you full and give you extra protein despite this being a vegetarian recipe!
Hearty Kale Salad with Avocado and Lime Dressing

- Salad:
Fresh kale (I had a bag of cleaned and chopped kale in the fridge)
1 Can of chickpeas, drained
1 Pack of cherry tomatoes, halved
1 Bunch of scallions, chopped
1 Cup of cooked & cooled quinoa
2/3 Cup of crumbled feta cheese
- Dressing:
1/2 of Avocado
Juice for 1/2 of lemon or juice from 1 lime
1/2 Cup of Olive Oil
1/4 Cup of white vinegar
Salt & Pepper to taste
Directions
- Wash and clean your kale, remove center stems and chop. Add to a bowl, and add 1/2 teaspoon of salt.
- Add to a bowl, and add 1/2 teaspoon of salt. Massage the salt into the kale with your hands. This will ensure the kale is crunchy but not too hard or unpleasant in texture.
- Add quinoa, halved cherry tomatoes, drained chickpeas, chopped scallions to the kale.
- In a food processor, add the 1/2 avocado, lemon or lime juice, olive oil, vinegar, and salt and pepper. Blend until you have a smooth dressing.
- Pour dressing over the salad. Mix well and top with your crumbled feta cheese.
