What is Romesco Sauce?
Jump to RecipeHave you gotten tired of your usual tomato sauce? Enter Romesco! This sauce actually originated in Spain and was created by fishermen to enjoy with fish. Romesco sauce is made of charred tomatoes and roasted red peppers as the base. Those main ingredients are puréed and thickened with stale bread and toasted almonds.
Add garlic ,pepper flakes and some vinegar – or anything else, really – I personally like to add parmesan – and you have yourself a very flavorful sauce that is also great for a pasta salad!
You can make Romesco sauce ahead of time and store it n the fridge for a good week to top pasta salads or use as a dip for anything you want to snack on!
Pasta Salad with Romesco Sauce

minutesIngredients – For the sauce
4 roasted red peppers (from a jar)
Handful of raw almonds or walnuts
1-2 garlic cloves, peeled
1/2 cup Olive Oil
1/4 tsp cayenne pepper or red pepper flakes
Salt & Pepper to taste
- For the Pasta Salad:
1 pack of Pasta of your choice (if preparing for 4 people)
1 cup grated Parmesan
1 cup packed of Arugula
1 cup of halved Cherry Tomatoes
Fresh Basil chopped
Directions
- Throw all sauce ingredients into a food processor and blend until you have a smooth sauce
- Cook pasta according to package directions and let cool
- Add Cherry tomatoes and Arugula to your pasta
- Top pasta with the sauce and mix well, then top with grated Parmesan
