Why do I say this you ask? Well, in order to understand how the most epic caesar dressing of all time came about, there are a few details I need to share first!

Many moons ago in the distant year 2010, I met a young lady by the name of Naomi. She happened to be a chef, and I happened to be a foodie. She happened to be Puerto Rican, I happen to be Bulgarian. What resulted is a friendship that is going strong until this day, powered by our love for great food, fresh ingredients, and last but certainly not least – the undeniable fact that in many ways we are so similar when it comes to the things we consider important in life.

We’ve shared recipes from Puerto Rican and Bulgarian cuisines, memories, endless times cooking together – whether it be at my home or Naomi’s. Usually, these cooking sessions are either started by opening a bottle of wine or champagne.

We pour the wine, start the conversation, and commence the dish preparation. I always had an appreciation for food, but my friendship with Naomi has brought this to an unparalleled level of passion that ultimately led me to starting this blog.

Now onto the most epic Caesar Dressing of all time!

Now that you understand the why behind this post, let’s move onto Naomi’s caesar salad dressing which just so happens to top all charts in regard to flavor that can make your taste buds jump up and do a happy dance.

The Most Epic Caesar Dressing of All Time

Ingredients

  • 8 Anchovy filets or 4 whole anchovies

  • 8 Garlic cloves

  • 5 TB Mayonnaise of your choice

  • 2 TB Dijon mustard

  • 2 TB Olive Oil

  • 1 Lemon – zested & juiced

  • Grated parmesan (1/4 – 1/3 cup)

Directions

  • In a food processor, blend anchovies and garlic until a paste forms
  • Add the mayonnaise, dijon mustard, olive oil, zest of lemon and lemon juice, salt and pepper to taste (I recommend lots of black pepper)
  • Pulse in some grated parmesan – as much as you like!
  • If the dressing comes out thick, you can thin it out with water or more lemon juice
